Peanut Chickpea Buddha Bowl

This Peanut Chickpea Buddha Bowl is not only vegan and gluten free, but is also packed with protein and veggies. Grab your SmartRice and get cooking in your kitchen with this yummy and easy to make recipe!

Ingredients: 

  • 2 cans chickpeas, drained
  • 1 cup peanut sauce
  • 4 cups kale, chopped & de-stemmed
  • 2 cloves garlic, minced
  • 2 tbsp avocado oil (or cooking oil of choice)
  • 2 cups cooked SmartRice
  • sesame seeds (optional)

Directions:

  1. Prepare your favorite peanut sauce (recipe below), or buy from the store!
  2. Add your drained and rinsed chickpeas to a pan on your stove at low heat.
  3. Add 1/2 cup peanut sauce to the pan.
  4. Continue to heat for 5-10 minutes, stirring often.
  5. Sautee garlic with oil in another pan.
  6. Add chopped kale with garlic and cook until kale has softened.
  7. Prepare your buddha bowl: Add SmartRice to a bowl, topped with your kale, cooked chickpeas, sesame seeds, and a little more peanut sauce! Enjoy!

Peanut Sauce Ingredients and Directions:

  • 1/2 cup salted creamy peanut butter (or other nut butter of choice)
  • 2 Tbsp soy sauce
  • 2 Tbsp maple syrup
  • 1 tsp chili sauce or red pepper flakes
  • 3 Tbsp lime juice
  • About ¼ cup of water to thin outCombine all ingredients in a blender and serve.
